Caprese Chicken Salad

 

Caprese Chicken Salad with Hunter & Gather Cold Pressed Extra Virgin Avocado Oil

What you need (ingredients):

  • 125 grams of Mozzarella Pearls
  • 250 grams of cooked Organic chicken thighs or chicken breast
  • 300 grams of cherry or grape tomatoes
  • 300 grams of cucumber
  • ½ a red onion
  • Handful of basil
  • 3 tbsp Hunter & Gather Cold Pressed Extra Virgin Avocado Oil
  • 3 tbsp Balsamic Vinegar
  • ¼ tsp Pink Himalayan salt
  • ¼ tsp pepper

What you do (method):

  1. To prepare the salad, simply slice and mix together the cherry tomatoes, cucumber, red onion, and mozzarella pearls.
  2. For the dressing, add the avocado oil, balsamic vinegar, salt and pepper together. Whisk and pour over the salad!
  3. Divide the salad over 2 plates and top with the cooked chicken.
  4. Before serving, sprinkle with shredded or sliced basil.
  5. Enjoy!
