What you do (method):

  1. Begin by preheating the oven to 200C, then grab a medium sized oven safe dish
  2. While the oven is preheating, place a large skillet over a medium heat and add the avocado oil - once hot, sauté the onion and garlic in the oil for 1-2 minutes
  3. Wrap the thawed spinach in some kitchen towel and squeeze to remove all of the excess liquid, before chopping and adding to the skillet along with the diced artichoke hearts - cook for 5-7 minutes before removing from the heat
  4. To the warm skillet add the mayonnaise and cream cheese, stir until the mixture is completely combined before pouring into the oven safe dish
  5. Sprinkle the parmesan cheese over the top and bake for 20-25 minutes or until bubbling and brown
  6. Serve with raw vegetables, such as sliced celery and cucumber - or alongside some Keto seed crackers!
