Keto Barbecue Chicken Skewers with Ranch Dipping Sauce

What's the best chicken to use for barbecue skewers?

You can use any cut of chicken for this recipe, as long as it is skinless and boneless. Try to cut your meat into similar sized pieces so that they cook evenly (it is easiest to do this with chicken breast). Whichever cut of chicken you use to make this dish, always choose Free-range and ideally Organic if you can.

How long should you marinade meat for before it goes on the barbecue?

For this recipe, you can go ahead and marinade your chicken just before cooking, as our Unsweetened Classic BBQ Sauce is thick and sticks to the meat really well. The sticky, smokey sauce will give the chicken a caramelised and chargrilled coating with a rich and tasty sauce underneath.

However, if you are marinading your meat in a thinner sauce (such as our Avocado Oil Ranch Dressing) or an oil flavoured with herbs and spices, you will want to leave the meat sitting in the sauce for at least a couple of hours - ideally overnight in a refrigerator. This will allow it to infuse and soak up the flavour, as thinner sauces tend to just slide off the meat.

Which skewers are best for barbecuing meat?

You can use whichever skewers you have for this recipe. If you have metal skewers, be sure to take care when skewering your meat (spiky!) and during cooking (hot!) And if you're using wooden skewers, you should soak them in water for at least one hour before using, to stop them from burning.

  1. Cut the chicken into small, even and bite-sized cubes and thread evenly onto skewers, seasoning with salt and pepper
  2. Baste the chicken with a thin layer of barbecue sauce and cook – they can be cooked on the barbecue (around 10 minutes), on the stove top (around 10 minutes) or even baked in the oven (around 20 minutes) - just ensure the chicken is piping hot and cooked through!
  3. Once cooked, baste with a final layer of barbecue sauce
  4. Serve with a bowl of avocado oil ranch dressing for dipping - enjoy!
