Why homemade pate is always better than store bought
You can buy chicken liver pate (amongst other varieties) in almost any store, so why make your own from scratch?
Well, like most premade foods in supermarkets, ready to eat pate often contains unwanted ingredients such as artificial flavourings, colourings, grains, seed oils and preservatives.
Homemade chicken liver pate is not only free from these undesirable extras, but is also quick & easy to make - not to mention incomparable in freshness and flavour.
Once you have made your chicken liver pate, you can store it in the fridge in a sealed container for 1 week. If including the suggested clarified butter topping, your pate can last even longer for up to 1 month. However, the chances that you can resist eating it for that length of time are very slim!
Liver: The most nutrient-dense food on the planet?
Liver is not an ingredient most people cook with often. It may be seen as old fashioned or even unappetising, but it is only in the past 50 years or so that liver has not been a staple food at the dinner table.
By enjoying offal and organ meats as well as conventional cuts, you can boost your intake of many essential nutrients including Vitamin A, the B Vitamins, Iron, Copper, Selenium and Zinc. These are nutrients which are often devoid in the modern diet as we don't eat enough organ meats.

Hunter & Gather Unsweetened Ketchup
Depending on the recipe, chicken liver pate can include a variety of ingredients including brandy, double cream and anchovies. These help to balance out the flavours of the pate with some added acidity, they also help to loosen the texture of the pate.
In our recipe we have used our own Hunter & Gather Classic Ketchup. It is made with perfectly ripened tomatoes, which are naturally sweet and a special blend of vinegars and spices which have the perfect acidity to work with the rich livers.

What you need (ingredients):
Pate
- 1 red onion, finely diced
- 1 garlic clove, finely chopped
- 225g grass fed butter
- 2 tablespoons Hunter & Gather Ketchup
- 500 grams chicken livers
Topping
- 100g grass fed butter
- 1 tablespoon fresh thyme leaves
- 1 teaspoon ground black pepper
What you do (method):
- Heat a large skillet to a medium heat, add a few tablespoons of the butter (don’t stress about the amount - just enough to cook the onions and garlic!) - once melted, add the onions and garlic then sauté for 1-2 minutes
- Add the chicken livers to the pan along with a bit more butter if needed, cook for 3-5 minutes on each side or until the livers are cooked through
- Place the liver mixture, the rest of the butter and the Hunter & Gather Ketchup into a food processor, process until smooth and spread into a serving dish
- To make the topping, in a microwave safe bowl melt the additional butter (this will take about 30 seconds) then add the thyme and pepper to the butter before pouring over the liver mixture
- Allow the entire dish to cool in the fridge until set - roughly 4-6 hours
- Serve with fresh veggies or Keto crackers, then enjoy!
