Triple Berry Chia MCT Oil & Collagen Pudding Recipe

Raspberry, Blueberry and Blackberry Chia Seed Pudding with Coconut Milk and Collagen Peptides 

Gluten-Free, Refined Sugar-Free, Paleo, Whole30, Keto & Diabetic friendly 

Just because you are looking to cut back on sugars in your life, doesn't mean that you have to go without a "pudding". These little chia pots are the perfect recipe to transition from sugary cereals in the morning or sugar-laden evening desserts.

Plus, we think they look adorable - why not have these instead of cake at a Keto, Paleo or Gluten-Free afternoon tea? or make a batch of these for the fridge for the kids. 

With added protein and essential amino acids from the collagen plus great fats from the MCT oil and Coconut milk - these pots will soon become a household favourite!

Are strawberries or other berries suitable for the Keto or Paleo lifestyle?

Yes, you can still have berries if you are following a Keto or Paleo lifestyle. Some fruits are a no-go when following Keto due to their high sugar and carb content. 

For example, a banana has 23g of carbs per 100g, which if you are following a strict Keto lifestyle of <20g carbs per day, you can see how a banana just doesn't work. 

Berries are generally lower in carbohydrates and sugars vs other fruits and do have a place in the Keto lifestyle or for those looking to lower their sugar intake. 

  • Raspberries have 12g of carbs per 100g
  • Blueberries have 14g of carbs per 100g
  • Blackberries have 9.6g of carbs per 100g

This recipe calls for about 20g of berries per cup, so roughly 2-2.5g of carbs

Why should I be using Organic berries, such as raspberries, blueberries and blackberries? 

Berries (more specifically strawberries are top of the dirty dozen list), this is a list of the fruits and vegetables that are the worst offenders for pesticide residue and/or GMO crops. 

With berries, we recommend shopping Organic to avoid exposure to chemical pesticides - however, be aware that not all fruit is the same.

With Avocados, for example, they are top of the Clean 15 list for being the cleanest fruit for pesticide use - plus the thick skin helps protect the fruit from pests, therefore not needing spray pesticides. 

What coconut milk do you use? are they all the same?

We love coconut milk, and we often use it to make Ice Cream, Smoothies and adding to soups or stews too. 

A great way to up your healthy fats, however, do be careful that there are no hidden nasties. You can get canned or pouches of coconut milk that are purely coconut and water without added thickeners, E numbers or preservatives. 

Why would I want to add MCT oil to this recipe?

MCT oil is a medium-chain triglyceride oil. Our MCT oil is made from Organic Coconuts and is free from palm oil, blends of oils or sugars. Triple steam distilled for purity, it can be added to tea, coffee, smoothies, shakes, salads or this chia pudding. 

We add MCT oil to this recipe as a great way to obtain more of your healthy fats, whilst adding an almost creamy texture to the pudding. Remember you don't just have to have your MCT oil in coffee, it can also be used in other real food recipes.

What you need (Ingredients):

What you do (Method):

  1. In a large bowl, combine the chia seeds, coconut milk, MCT oil, collagen and optional ingredients, if using.
  2. Stir until thoroughly combined.
  3. Refrigerate for 2-3 hours or up to overnight – until the chia seeds have absorbed the liquid and are set into a jelly-like consistency.
  4. Spoon on top of berries of choice + serve!
