Spicy Keto & Paleo Chicken Liver Meatball Recipe with Chipotle Ketchup

If you are like us, then you understand the importance of adding alternative cuts of meat and offal into your lifestyle. Organs are packed with beneficial vitamins and minerals, plus they are a cost effective way to feed the family as these lesser used organs are cheaper than prime cuts and mince meat. 

This recipe is a great way to incorporate chicken livers into your families meals, as chicken livers are more subtle in flavour than other organ meats. This recipe could soon become a family favourite.

I am not a fan of organ meats but I do want to get the health benefits - what can I do?

Whilst eating real, fresh, grass-fed organs is gold standard. Fear not, you are not alone when it comes to not liking them. Whether it's the taste, smell, preparation or lack of availability of good quality organs - there is now another way. At Hunter & Gather we have developed a range of freeze-dried organ capsules to help those wanting to obtain the benefits of organs but without the taste or prep. Encapsulated in a gelatin capsule, all you need to do is take between 2-6 capsules per day. Easy!

Can I use lamb mince or other offal for this recipe too?

Yes, experiment to your hearts content. Pardon the pun, but you can include heart, liver or even kidney into this recipe should you wish. Lamb mince is also great if you prefer this over beef mince. All we recommend is sourcing grass fed, pasture for life if possible.

Spicy Chicken Liver Meatballs
Paleo, Whole30, Keto, Gluten Free & Low Carb
Makes 16 meatballs, depending on size of each ball

What You Need (Ingredients):


Meatballs

  • 2 tbsp Hunter and Gather Avocado Oil 
  • 400 grams chicken livers
  • 400 grams grass fed mince beef
  • 1 tsp salt
  • 1 pinch black pepper
  • 1 Free Range or Organic egg
  • 25 grams almond flour

Sauce

      What You Do (Method):

      1. Start by heating a large cast Iron skillet to medium heat. Add the avocado oil.
      2. While the pan is heating, trim any hard or stringy bits off of the chicken livers.
      3. Cook the chicken livers for 3-5 minutes per side until brown.
      4. Pulse the cooked chicken livers in either a food processor or blender until they are smooth.
      5. Add to a large bowl along with the other meatball ingredients. Mix thoroughly.
      6. Shape meatballs into desired size.
      7. Cook on all sides in the same skillet at medium heat for 3-4 minutes until the meatballs are cooked through (roughly 15-20 minutes total).
      8. In a small bowl, mix together the spicy ketchup, coconut aminos and honey, if using. Add to the still hot meatballs in the pan and stir until everything is coated and warmed through.
      9. Serve and enjoy!

      Top Tip* - you can also make this recipe with our BBQ sauce  or Classic ketchup  too. We also love stirring in some avocado oil mayonnaise to add a creamy twist.
