KETO AND PALEO MEATLOAF WITH SMOKEY BARBECUE SAUCE

Meatloaf is a staple dish in the states and is a great way to gain the nutrients from a combination of meats in one simple dish. Making your own meatloaf means you can choose the best quality ingredients, like grass fed beef and quality pork, so that you know exactly what you're eating. The addition of our Smokey Barbecue Unsweetened Sauce gives the meatloaf a great flavour and appearance.

What is Meatloaf?

The clue is in the name when it comes to meatloaf, it's quite literally meat cooked in a loaf tin to create - you guessed it - meatloaf! Creating a great meatloaf is almost an art, it isn't easy to keep your meat flavoursome, juicy and tender whilst avoiding it crumbling apart when sliced.

We think we have perfected this recipe to tick all of those boxes! Once you've made your own meatloaf from scratch - free from grains, sugar and seed oils - you'll never opt for store-bought again.

Why Should I Add Barbecue Sauce to my Meatloaf?

Another hallmark of a good meatloaf is a shiny glaze on the outside of the meat. That's where our smokey barbecue unsweetened sauce comes in. Coating your meatloaf in our barbecue sauce midway through cooking allows the flavour to penetrate the meat and also gives the loaf a sticky and shiny glaze.

In the United States where this dish originates, meatloaf is often smoked instead of baked in the oven - so this is a great hack to replicate that authentic flavour!

Is Barbecue Sauce Good for Me?

Store bought sauces are often crammed with artificial ingredients, preservatives and harmful added sugars. But like all of our sauces, our Unsweetened Smokey Barbecue Sauce is free from refined sugars, grains and seed oils. It's also free from the dates and artificial sweeteners usually added to 'healthier' sauces to sweeten them up.

We use perfectly ripened tomatoes, balsamic vinegar, apple cider vinegar and a selection of natural spices and seasonings to make our unsweetened barbecue sauce taste incredible. So, barbecue sauce is good for you - if you choose the Hunter & Gather unsweetened variety!

Meatloaf is the ideal centrepiece for any Keto or Paleo meal. Here are some of our favourite suggestions for tasty sides to accompany your meatloaf:

Can I Keep Leftovers in the Fridge?

Once cooked, allow your meatloaf to cool and transfer any leftovers into an airtight container. This will keep in the fridge for 3 days and the freezer for 2 months. We recommend leaving the remainder of your loaf unsliced until reheated so that it stays as moist as possible. Of course, always be sure to thoroughly reheat your meatloaf.

What You Need (Ingredients):

What You Do (Method):

  1. Preheat the oven to 200C (400F) and prepare a loaf pan by lining it with baking paper, the paper should hang over each side of the tin so that it will be easy to lift the meatloaf out when it’s finished
  2. In large bowl, add all of the meatloaf ingredients (minus the additional barbecue sauce reserved for topping)
  3. Using your hands (or a fork if you prefer) mix the meatloaf ingredients together, trying not to press and compact the meat but carefully mixing the ingredients together until they are combined
  4. Transfer the mixture to the prepared loaf tin and press it into the pan to form a loaf shape, then bake in the oven for 20 minutes
  5. Remove the loaf from the oven and spread the barbecue sauce over the top of the meatloaf, before returning it to the oven and baking for an additional 30-40 minutes until it is cooked through
  6. Allow to cool for 5 minutes before slicing into thick wedges, just as you would a loaf of bread
  7. Serve with an additional dollop of Hunter and Gather Smokey Barbecue Sauce and your favourite sides from the suggestions above!
