What you need (ingredients):
- 125 grams of Mozzarella Pearls
- 250 grams of cooked Organic chicken thighs or chicken breast
- 300 grams of cherry or grape tomatoes
- 300 grams of cucumber
- ยฝ a red onion
- Handful of basil
- 3 tbsp Hunter & Gather Cold Pressed Extra Virgin Avocado Oil
- 3 tbsp Balsamic Vinegar
- ยผ tsp Pink Himalayan salt
- ยผ tsp pepper
What you do (method):
- To prepare the salad, simply slice and mix together the cherry tomatoes, cucumber, red onion, and mozzarella pearls.
- For the dressing, add the avocado oil, balsamic vinegar, salt and pepper together. Whisk and pour over the salad!
- Divide the salad over 2 plates and top with the cooked chicken.
- Before serving, sprinkle with shredded or sliced basil.
