What you need (Ingredients):

  • 1 large courgette finely chopped into noodles (or prepackaged courgetti)
  • 2 tbsp Hunter and Gather Avocado Oil
  • 1 garlic clove, minced
  • 1 small knob of ginger, minced
  • ½ an onion, finely diced or sliced in half moons
  • 1 red chili, sliced in half
  • 6 tbsp Hunter and Gather Bone Broth Powder
  • 600 mls of water
  • 2 tbsp coconut aminos (optional)
  • 2 tsp fish sauce
  • Pinch of salt
  • 1 lime
  • Handful of coriander
  • 2 soft boiled eggs
  • 1 tbsp sesame seeds

What you do (method):

  1. Heat a medium sized sauce pan to medium heat before adding the Avocado Oil.
  2. To the oil, add the onion, ginger, garlic and red chili.
  3. Sauté for 1 minute before adding in 600 mls of water and the Hunter and Gather Bone Broth Powder. Whisk together and simmer for 2–3 minutes before turning off the heat.
  4. Stir the coconut aminos and fish sauce into the broth and taste for seasoning. Add desired amount of salt.
  5. In 2 bowls, divide the courgetti noodles before pouring the broth and aromatics over the top. (Remove the chili pepper to tone down the heat).
  6. Cut the soft boiled eggs in half and place on top before sprinkling with sesame seeds.
  7. Top each dish with a big pinch of coriander and a hefty squeeze of lime juice. Enjoy!
