MOVE OVER SUNDAY ROAST, THERE'S A NEW RECIPE IN TOWN THAT PORK CRACKLING WAS MADE FOR!
Why would I add collagen and crackling to my chicken thighs?
Collagen and pork crackling are both packed with protein and bioavailable nutrients, which are all too often missing from the modern diet due to preference for conventional cuts of meat over off cuts.
Adding Hunter & Gather Collagen Peptides to meals and drinks is a great way to benefit from these nutrients easily and conveniently in the pursuit of optimal health. You can use our bovine or marine collagen peptides in this recipe!
Pork crackling may have a bad reputation as a guilty pleasure bar snack, but it is actually a great addition to Keto, Paleo, Carnivore and Low Carb lifestyles. Blitzed to a powdered form, pork crackling is a super low carb and gluten-free alternative to breadcrumbs in recipes like this one.
What is the best pork crackling to use?
For this dish you can make your own pork crackling if you have an amazing recipe or some pork skin which needs using! It's also a great way to use up any leftover crackling from the Sunday roast (has this ever happened?!)
But if you're feeling lazy or in a rush, there are loads of great readymade pork crackling snacks to choose from. They are ideal for adding to recipes such as this and also make a great Carnivore, Paleo and Keto friendly snack to enjoy on the go. Just watch out for added seed oils, gluten, sugar or maltodextrin.
We love these Awfully Posh Sea Salt Pork Crackling snacks. They are fried in pork fat rather than vegetable oil and are made using premium pork rinds and sea salt - nothing else! You'll need just one quarter of a bag for this recipe, so can enjoy the rest with a refreshing Sugar Free Citrus Collagen Spritzer!
Which chicken thighs are best?
For this recipe you can use chicken thighs which are boneless and skinless, or on the bone and skin-on - it's really up to you. Just be sure to follow the different cooking times below based on which thighs you use.
Whichever you choose, always be sure to go for organic and free range chicken thighs. It's the best choice for the chickens, the planet and yourself - as they also taste far superior!
We love these organic chicken thighs from Coombe Farm Organic! 🍗
