Mayonnaise is one of those everyday staples that earns its place in the fridge. Spread through sandwiches, folded into salads, spooned alongside roasted vegetables or turned into dressings. When something gets used that often, we think what goes into the jar matters.

For our Olive Oil Mayonnaise, it starts with the oil. Making up 80% of every jar, our olive oil comes from olives grown in traditionally planted ancient groves in southern Spain, where generations of olive-growing experience run deep. It brings a smooth, rounded richness that makes this mayonnaise distinctive, while still letting the food around it shine.

The rest is deliberately simple. British free-range egg yolk brings that familiar creamy texture, while apple cider vinegar and pink Himalayan salt round out the flavour. Just five real ingredients in total. The egg yolk is used in its natural liquid form rather than powdered, keeping the recipe recognisable and uncomplicated.

The result is a rich, creamy, seed oil-free mayonnaise made with 100% natural ingredients, with no gluten or refined sugar. A familiar staple, made with ingredients worth paying attention to.

Does Olive Oil Mayonnaise taste strongly of olive oil?

It has more depth than a mayonnaise made with a neutral oil, but it is balanced rather than overpowering. The olive oil brings a rounded, savoury richness, held in check by apple cider vinegar and British free-range egg yolk. It complements food rather than competing with it.

How should I store Olive Oil Mayonnaise?

Keep it in the cupboard until you open it, then store it high up in the fridge door rather than at the back. Below around 4°C it can begin to solidify, which is why the coldest parts of the fridge are worth avoiding. Once opened, follow the guidance printed on the jar.

Why has my mayonnaise separated or gone solid?

Because there are no thickeners or artificial preservatives in it, the emulsion can break if the temperature swings sharply. It is rare, and more likely in winter. If it happens to your jar, get in touch and our customer care team will sort it out for you. It is not a sign the mayonnaise has spoiled.

What can I use Olive Oil Mayonnaise with?

Spread it generously into sandwiches, fold it through salads, spoon it alongside roasted vegetables, or use it as the base for dips and dressings. It is the richer of our two classics, so it suits food that can carry a bit more flavour.
