Ketchup is probably one of the sauces we think about least and reach for most. Eggs, burgers, chips, sandwiches, the side of the plate - somehow the bottle always seems to empty. Which feels like a pretty good reason to care about what goes into it.Ours starts with tomatoes, because they should be doing most of the work.
They bring their own natural sweetness and rich tomato flavour, which means there is no need for added sugar, syrups or artificial sweeteners to make this taste like proper ketchup. Apple cider and balsamic vinegars bring brightness and tang, balanced with pink Himalayan salt, onion and garlic. Then come black pepper, cayenne, coriander, clove and allspice, building the gentle savoury warmth and depth behind every dollop.
It’s a recipe made from real, recognisable ingredients, without seed oils or chemical preservatives getting in the way. And that matters because better ingredients shouldn’t mean settling for something that tastes like the “better-for-you” version.
Ketchup still needs to be ketchup: rich, tangy, smooth, glossy and satisfyingly thick. The kind you pour generously, dip chips into and put straight on the table for everyone to share.
