Makes 12 Servings

What you need (ingredients):

What you do (method):

  1. In a large bowl, whisk together the eggs and mayonnaise until smooth
  2. Add the coconut flour, baking powder, salt and oregano - whisk once more until combined into a thick pancake batter consistency
  3. Heat a skillet to medium and add the avocado oil, once hot spoon 1 tablespoon or so of the batter mixture into the pan and cook for 1-2 minutes per side, until golden and firm
  4. Transfer each pizza base to a baking tray lined with parchment paper and preheat the oven to 200C
  5. Top each pizza with 1-2 teaspoons ketchup, followed by the desired amount of grated cheese (and any other toppings - sausage, basil, pepperoni, etc.)
  6. Bake in the oven for 5 minutes or until the cheese has just melted - then enjoy whilst still warm and gooey!
