Which chicken thighs are best?

For this recipe you can use chicken thighs which are boneless and skinless, or on the bone and skin-on - it's really up to you. Just be sure to follow the different cooking times below based on which thighs you use.

WHAT YOU NEED (Ingredients):

  • 4 free range chicken thighs
  • 2 free range eggs
  • 2 tablespoons Hunter & Gather Collagen Peptides
  • 25g pork crackling or pork rinds
  • Himalayan rock salt & cracked black pepper to season

WHAT YOU DO (Method):

  1. Preheat the oven to 200C and line a baking sheet with parchment paper
  2. In a shallow bowl, crack the eggs and add the collagen - whisking together until combined
  3. Using a food processor, blitz the pork crackling until you get a fine textured powder (you can also crush in a pestle and mortar, it’s okay if there are some small chunks!)
  4. Season your chicken thighs with salt and pepper before dipping them into the egg mixture
  5. Ensure the whole thigh is coated with egg and then dip into the pork crumbs, press the crumbs into each side of the chicken thigh and place onto the baking sheet
  6. Repeat with remaining thighs
  7. Bake for 45 minutes to 1 hour if using bone in and skin on thighs, or 35-45 minutes for boneless and skinless thighs - enjoy right away!
