Keto Dark Chocolate Mousse with Collagen Peptides

KETO, GLUTEN-FREE AND LOW CARB DARK CHOCOLATE MOUSSE WITH ADDED COLLAGEN PEPTIDES

Chocolate mousse is a classic dessert which is a much loved favourite, without being too heavy or filling. What may surprise you is that it's so easy to make your own real food, healthy and delicious Keto friendly dark chocolate mousse at home. With added collagen peptides, this protein packed pud is as nutritious as it is delicious!

WHAT IS INULIN SYRUP THAT'S USED IN THIS RECIPE?

Inulin syrup is derived from chicory root, a prebiotic fibre. As inulin syrup is high in fibre, it is low in net carbs and so its natural sweetness makes it a great Keto alternative to sugar and sweeteners - and ideal for sweetening Keto desserts such as in this one. Inulin syrup has a low GI impact and will not cause blood sugar spikes in the same way as refined sugar.

HOW CAN YOU MAKE MOUSSE WITH AVOCADOS?

Avocados have a smooth, velvety texture when mashed - perfect for making a light and airy mousse.

What's more, the subtle flavour of avocado is a great vessel for carrying other flavours like the cacao powder and inulin syrup in this recipe.

Whilst most mousses are made using eggs, this recipe is egg free and so perfect for those with an egg allergy.

WHY SHOULD I USE COCONUT MILK?

Many dairy foods are naturally high in fat and low in carbohydrates, making them ideal for the Keto diet. However, it may surprise you to learn that cow's milk is actually high in carbs from the lactose sugars and so not compatible with Keto - in fact, same goes for sheep and goat's milk.

Coconut milk is a great alternative to traditional cows dairy milk as it is very high in healthy fats, whilst low in carbs. It also adds a subtle but recognisable coconut flavour too, which works great with chocolate!

Dark Chocolate Mousse

Keto & Gluten-Free

Makes 4 Servings

NUTRITIONAL INFO (PER SERVING):

Calories: 341

Fat: 13.7g

Of which saturates: 2.6g

Carbohydrate: 5g (net)

Of which sugars: 3.7g

Protein: 17.6g

WHAT YOU NEED (INGREDIENTS):

  • 300g ripe avocado flesh (around 3 avocados)
  • 150g inulin syrup
  • 110ml full fat coconut milk
  • 55g cacao powder
  • Pinch of Himalayan rock salt
  • 4 tablespoons Hunter & Gather Collagen Peptides

Optional toppings:

  • Whipped coconut cream
  • Fresh raspberries
  • Mint leaves to garnish

WHAT YOU DO (METHOD):

It's easiest to use a blender or food processor to make your mousse, but you can also make it by hand using a good old whisk if you don't have access to a blender - think of it as a healthy dessert and incidental workout all in one!

In a blender:

  1. Simply add all the ingredients to a food processor or blender and blitz until smooth!

By hand:

  1. Start by mashing the avocado until it is completely smooth
  2. Add the remaining ingredients and whisk until thoroughly combined and velvety smooth!

Once you have made your Keto dark chocolate mousse, divide the mixture between 4 glasses or bowls and chill for a minimum of 1-2 hours. Serve with whipped coconut cream, raspberries and a sprig of mint if you're feeling fancy!
