Festive Spice Middle Eastern Duck

Why not have a twist on the classic Christmas roast this year and try this tasty middle eastern inspired duck, that is packed full of taste, healthy fats and also creates a wow centre piece for the table.

Serves 3-4

What You Need:

  • 1 Whole Duck
  • 2 Clementines
  • 1 Head of Garlic - top chopped off horizontally
  • 1-2 tablespoons Ras el hanout spice mix
  • 100g Pomegranate seeds

For the Carrots

  • 12 Baby Carrots (You can use radishes or a lower carb vegetable if proffered)
  • Juice of 1 Clementine
  • 2 teaspoons Hunter & Gather Avocado Oil
  • Himalayan Pink Salt and black pepper

For the Citrus & Coriander Sauce 

What You Do:

  1. Preheat the oven to 210 degrees. 
  2. Prick the duck all over with a knife concentrating on the fatty areas.
  3. Rub with the ras el hanout and season.
  4. Add the whole garlic bulb and 1 clementine (cut in half) to the cavity.
  5. Place in the oven and cook for 45 minutes.
  6. Now turn the temperature down to 160 degrees and cook for a further 1 hour 45 minutes.
  7. Leave to rest for 30 minutes.
  8. Turn the oven back up to 200 degrees for the carrots

For the Carrots 

  1. Drizzle with clementine juice and the avocado oil, season and roast for 20 minutes.

For the Sauce

  1. Blitz the sauce ingredients together adding a little oil or lemon juice if to thick.
  2. Drizzle over the cooked duck and carrots
  3. Sprinkle pomegranate seeds to garnish
